Dissolve sugar in water and pour the mixture over the apples until they are fully submerged. The sugar provides food for natural yeasts and bacteria, which are essential for fermentation. Cover the jar loosely with a breathable material such as a coffee filter or cheesecloth secured with a rubber band. This allows air in while keeping out dust and insects.

Step 2: First Fermentation

Let the mixture sit at room temperature for two to three weeks. During this period, natural yeasts convert the sugars into alcohol. Stir the mixture gently every few days and ensure the apples remain submerged to prevent mold.

Step 3: Strain the Mixture

After the first fermentation, strain the apples from the liquid using a fine mesh strainer. For a clearer product, run the liquid through cheesecloth to remove small particles.

Step 4: Second Fermentation

Return the liquid to a clean jar and cover it again with a coffee filter or other breathable material secured with a rubber band. This allows acetic acid bacteria to convert the alcohol into vinegar. Leave the mixture to ferment at room temperature for several more weeks. Taste the liquid periodically. The vinegar is ready when it reaches the acidity and flavor you prefer.

Step 5: Final Straining and Storage

Once the vinegar has developed the desired flavor, strain it one final time if needed to remove any remaining solids. Transfer the finished vinegar to a clean bottle or jar and seal it with a cap. Store it in a cool, dark place or in the refrigerator.
